Starting Up Your Own Bagel Store

New bagel store operators are finding out that they do not have to make the bagel dough in their own store, but rather, they can order and bake-off already made raw dough bagels (also known as frozen unbaked bagels) direct from A&S Bagels. Since the baking of the bagels is still done at the store level, customers will be able to smell the bagels baking in the oven.  Just Imagine that, giving your customers what they want.

I.      Reduce your need for Labor Resources
Less wasted labor resources equals more profits.  By purchasing pre-formed dough bagels, your labor resources will not need to be dedicated to mixing the dough, and working on the bagel making machine.  Rather, you can use your paid labor more effectively in other areas of your business.

The Science and Secrets of Bagel Making



As you may have heard already, one critical step in bagel making that separates true New York Bagels apart from the rest is the boiling process.
Since 1986, A&S Bagels have been boiled prior to being baked. The process of boiling our bagels prior to baking them creates the shiny crust of our bagels and the chewy interior. The bagel crust created by boiling the bagel essentially creates a wall which restricts the dough under the crust from expanding and provides the foundation of the bagel so that the bagel maintains its shape during baking in the oven. Also, once the bagel is boiled, the activity of the yeast ingredient is diminished. The yeast ingredient during the fermentation stage helps provide the bagel with its flavor and volume (size). Since the dough inside the crust is restricted from expanding due to the crust formation and the cessation of the yeast activity (and because of other factors), the dough inside of the crust of a bagel is denser and chewier than other breads (for example, rolls). Lastly, the boiling process provides a wet surface on the bagel for the toppings and seeds to adhere to.

Toasted French Toast Bagel

1.          In the article entitled "Baking up Variety" by Jen Roth appearing in the April 2013 issue of Snack Food and Wholesale Bakery (available at http://www.snackandbakery.com/articles/86405-baking-up-variety), Gregory Scolieri discussed some of the innovative flavors offered at A&S Bagels.  Here is an excerpt of the article:

2.          Fox 5's Good Day New York and Vanessa Alfano televised their morning show live from A&S Bagels.  Vanessa Alfano, a Features Reporter for Fox 5 took a tour of our retail and baking operations and aired several segments live throughout one morning.  In the first few segments, Vanessa Alfano interviewed Anthony Scolieri about A&S Bagels' history.  While on air, she sampled our French Toast bagel with crumb topping topped with powdered sugar.
